This recipe is inspired by a salad my grandma, Moselle, would make. She usually used 5 different kinds of beans and then marinated them in the refrigerator overnight before serving. There were things I loved about that salad, and things I could do without. I loved the fresh green beans and the wax beans. So crunchy, with a sweet and sour flavor. The kidney beans were my least favorite and were often left behind on my plate. (Causing frowns from ALL of the matriarchs in the family!) I just didn't like the texture of a pickled kidney bean. So, you won't find those here.
The recipe I am referencing is one I developed for the Cooking Channel website. I developed a package of Cajun inspired recipes that included this recipe and many other favorites like okra gumbo and a super delicious muffaletta sandwich. Find the salad recipe here.
I made the salad for friends at a New Year's Eve party, and it was gone just as fast as the homemade tortillas for the brisket tacos! The pickle-y and spicy flavor of the vinaigrette was the perfect accompaniment for the rich beef and flatbread. Make this salad in good health and wealth in the new year.
